grilled marinated vegetables w. mango ginger chutney + sesame-sherry-polenta







grilled vegetables:
sliced eggplants and zucchini marinated w. dark soy sauce, maple sirup, garlic, shallot, ginger, chili

polenta:
as usual, but add sesame oil + sherry instead of olive oil.

mango ginger chutney:
1 mango (mellow), 1 shallot, 1 clove of garlic, 1 star anise, chili powder, chili oil, brown sugar, balsamico, cinnamon (dash), 1 cardamom, 2 cloves, ginger, 2 bay leaves, garam masala (dash). fry shallots, garlic and ginger (in chili oil), add spices until fragrant, add sugar, deglaze w. balsamico + sherry, add mango, stir+simmer for 35-45 min., if necessary season w. additional balsamico or sugar
